Use these pie crust instructions to create a lattice or decorative roses for any two-crust pie recipe.

2 1⁄2 cups
unbleached all-purpose flour
1⁄3 cup
vegetable shortening

8 tablespoons
unsalted butter (cold)
7 tablespoons
ice water (may increase up to 10 tablespoons)

2 teaspoons
milk
1 tablespoon
coarse sparkling sugar

LATTICE CRUST

  1. Roll out top crust as usual, making sure to make it big enough to cover your pie.
     
  2. Cut crust into strips using the pastry wheel.  You may want to keep them even or be less conventional and have some wide and some narrow.  The unconventional style still looks great and is easier to hide imperfect sizing as intended styling.
     
  3. Lay the shortest strip at the edge of the pie.
     
  4. Then lay every other strip you’ve cut perpendicular to the first strip.
     
  5. Placing the edge of the first perpendicular strip under the first strip and the next strip on top, repeating until you’ve covered the whole pie. You can place as much or as little space between strips as you like.
     
  6. Once all of those strips are in place, take all the strips that are woven under the first strip and lay the back so that they are out of the way for laying down the next strip of crust.
     
  7. Now add a second strip running parallel to the first strip you placed on the pie, fold down the strips that you laid back and fold back the strips of crust that are now woven under the second strip.
     
  8. Repeat until your pie is covered.
     
  9. Crimp the edges of the lattice crust with the bottom crust.
     
  10. Follow the Apple Pie instructions for baking your pie. If you are using a different pie filling, follow those instructions for baking.

 

ROSES CRUST

  1. Roll out top crust as usual, making sure to make it big enough to cover your pie.
     
  2. Cut small circles in the crust, approximately 1”.  
     
  3. Take 3-4 circles and overlap each circle about half-way, then roll them up.
     
  4. Pinch the roll on one end and spread out the petals slightly on the other end.
     
  5. Place these roses on top of your pie filling.
     
  6. Placing them next to the edge and in groups will help stabilize them.
     
  7. You can add leaves or other crust decorations by simply cutting the shapes from the crust and adding them to the top of your pie.
     
  8. Follow the Apple Pie instructions for baking your pie. If you are using a different pie filling, follow those instructions for baking.

Notes

Be sure to use cold butter and ice water when making the crust; it helps keep the butter and shortening from dispersing throughout the dough, which in turn helps keep the crust flaky. Also, resting the dough in the refrigerator, both after mixing and rolling out, will dramatically increase the quality of your results by firming up the fats in the dough, helping it stay flakier.

Cooking time includes chilling and baking times.

Changing the recipe size does not change the instructions.  Specific ingredient amounts in the instructions will need to be adjusted accordingly.
